Soft & Fluffy Banana Pancakes
Pancakes are one of my favorite breakfast foods. I used to make them with the store-bought premade pancake mix, but of course, once I started eliminating processed foods I had to start making my very own pancake mix. I adore a classic pancake but sometimes I want to mix it up and I always have ripe bananas sitting in my kitchen. This banana pancake recipe is super easy to throw together. It doesn’t require any eggs either but feel free to whisk one in if you’d like. I hope you enjoy these banana pancakes as much as me and my family does!
Ingredients List:
1 cup all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
2 tablespoons avocado oil or melted butter + more for pan
1 mashed banana
1 cup whole milk
1 teaspoon vanilla extract
1 tsp ground cinnamon optional
Directions:
Preheat a skillet/griddle to medium-low heat and add in 1 tablespoon oil/butter until melted.
In a medium-sized bowl mix together your dry ingredients.
In a separate small bowl mix together the milk, mashed banana, vanilla extract, and oil.
Add the wet into the dry and whisk until combined.
Slowly pour about 1/4 cup of pancake batter into the preheated skillet and let it cook until you start seeing bubbles form on the top (roughly 2 minutes).
Flip the pancake and cook for another minute.
Remove pancake from the skillet and place on a plate.
You can add more oil/butter to the pan if needed and continue cooking your pancakes.
Serve immediately with softened butter and pure maple syrup!
