The best cucumber tomato salad comes from fresh, in-season produce!

This salad is one of my favorites in the summer time. It’s easy to make and delicious! This is a great dish to bring to a picnic or other gathering. The red wine vinaigrette brings it all together.

You can cut the vegetables any way you want. Since cucumbers and tomatoes have a lot of water in them, the longer it sits the more water will release from the vegetables. I like it like this too but if you want it less watery I would eat it as soon as you cut it all up. I hope you enjoy it!


Ingredients:

1 Cucumber

2 Tomatoes

1/2 Red Onion

Dressing:

1/4 Cup Good Quality Oil- Avocado or Olive

2 TB Red Wine Vinegar

1 TB Fresh Dill or 1/2 tsp Dried

1 TB Fresh Oregano or 1/2 tsp Dried

1 TB Honey or Sugar

1/2 tsp Salt


Directions:

  1. Cut up the tomatoes and cucumbers as you wish: sliced, chopped, quartered

  2. Thinly Slice the red onion and add all to a bowl

  3. In a jar with a lid add the dressing ingredients and shake for a good 30 seconds to a minute until emulsified

  4. I usually taste the dressing first before I add it to the salad. If it needs more sweetener add a 1/2 tsp at a time. If it needs more salt add a 1/4 tsp at a time

  5. Add the dressing to the salad and toss to combine
