Nourishing Homemade Chicken Noodle Soup

There is nothing like a nice warm bowl of homemade chicken noodle soup. It is great to make a big batch and store them in your freezer. I use these containers for easy freezer storage. I hope you enjoy!

Ingredients

3-4 Cups shredded/chopped chicken (from boiled or roasted chicken)

2 Quarts (8 cups) Chicken Broth Store-bought or Homemade

3 Carrots- peeled and chopped

2 Celery ribs- chopped

1 Yellow onion- diced

¾ Cup Egg noodles

4 Tablespoons butter/ghee

Salt to taste (I use about 1 Tablespoon)

Dash of Pepper

Fresh herbs (sprig Thyme & Rosemary) *optional

 

Directions

1.     Place your soup pot or Dutch Oven on the stove and set it to medium heat

2.     Melt butter in the pot then add carrots, onion, and celery

3.     Sauté for 10-15 minutes until tender

4.     Add chicken broth, bring it to a boil, and add your noodles

5.     Cook noodles according to the package instructions

6.     Once the noodles are cooked bring the heat down to low and add your chicken and optional herbs and let it sit for 5-10 minutes to let the chicken warm up and herbs to infuse into the soup

7. Pick out the herbs with a fork or ladle

8.     Add salt and pepper to taste
