Vegetable Succotash

This recipe is a great way to use those delicious vegetables from the farmer’s market. It makes a great side dish to any meat dish. It’s great to make in advance and take it to work. I hope you enjoy!

Ingredients Needed:

1 Yellow Squash- quartered then diced

1 Zucchini- quartered then diced

1 Red Pepper- diced

1 Yellow Onion- diced

3 Garlic Cloves- minced

2 Ears of Corn- kernels removed

1/4cup-1/2cup Chicken Broth

2-3 Tablespoons Butter

1 Tablespoon Fresh Dill or ½ Tablespoon Dried Dill

Salt and Pepper to taste


 

Directions:

1.     Preheat a large skillet or Dutch oven over medium heat. Melt butter, add onion, and garlic, and sauté until tender, about 5 minutes.

2.     Add Squash, zucchini, red pepper and sauté until tender, about 10-15 minutes.

3.     Slowly add chick broth while stirring.

4.     Add corn, dill, salt, and pepper

5.     Sauté another 10 minutes until the corn is tender.

6.     Enjoy!
