Home Fries Recipe
Home fries were something I never really knew about until I came to live in New York, where you could find them in pretty much ever diner you visited. Compaired to the shredded hashbrowns you ordered in Wisconsin diners, these beat them every time!
Once I moved back to Wisconsin, I was missing the classis home fries from New York. So I had to make my own! These home fries are simple to make and are full of flavor. You will be wanting these all week long!
Kitchen Items Needed:
Large Skillet or Dutch Oven
Metal Spatula
Ingredients:
3 Cups of Diced Potatoes (Yellow are my favorite but it works with Red potatoes or even Russets)
1 Small Yellow Onion Diced
1 Medium Red or Green Bell Pepper Diced
3 Garlic Cloves Sliced
4 Tablespoons Tallow, Lard, or Good Quality Oil (Avocado or Olive)
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1/2 Teaspoon Paprika
Few Dashes of Dried Parsley
Salt to Taste- roughly 1 Tablespoon
Instructions:

Preheat your skillet/Dutch Oven to medium heat
Melt the tallow/lard/oil in your skillet
Once melted add in all the potatoes and vegetables in a layer
Season with spices and salt
Let this cook for 7-9 minutes DONT TOUCH THEM (this allows for a good crisp to form on the bottom)
Do your best to flip them onto the other side then arrange them back into a good layer
Allow them to sit another 7-9 minutes
Continue to cook every 3-5 minutes until the potatoes are tender and cooked through (depending on the size of your dice this could be one more time or a few more times)
Once cooked make sure you taste them and salt more if desired
Serve hot!
*Store in an air-tight container in the fridge for 3-5 days.
